“I will be talking about Vitamin and Mineral Supplements. We often hear from family and friends and also through social media or advertisements indicating the importance of taking certain vitamins and minerals for one’s health. Now is it really necessary? Research has concluded that most people do not benefit from taking vitamin supplements. Their research clearly demonstrates that there are positive health outcomes that are more strongly related to eating specific foods compared to taking any supplements at all. That it is best to get nutrients from a healthy diet because people absorb vitamins and minerals from food more easily and more likely to consume these nutrients in a proper ratio. So, in conclusion, the benefits of supplements really depend on if it is necessarily needed for medical reason but otherwise if you eat a healthy balanced diet of protein, fresh fruit, fresh vegetables, whole grains, high in fiber, and foods low in fat and cholesterol, you should meet your nutritional needs without taking any mineral or vitamin supplements. Elsie Lee Szeto was raised and born in San Francisco, CA. She went to Chinese School in San Francisco for 6 years from grades 1-6 besides going to Elementary, Jr. High and Lowell High School. Elsie received a Bachelor of Science in Dietetics and Master of Science in Nutritional Science at San Jose State University and did her Dietetic Internship at UC Berkeley. Elsie has worked at various acute care hospitals in the Bay Area which includes Kaiser, Good Samaritan, Washington Hospital and Salinas Memorial Hospital. She also has experience working with children and students at various school districts. Other work experience including working with seniors at skilled Nursing facilities, Home Health agencies and community health organizations. Her interest includes promoting healthy eating for good health like giving out fresh fruits for Trick or Treats on Halloween. Working at AACI will give her the opportunity to promote Nutrition through patient consultations, Nutrition Workshops, Cooking demonstrations, Nutrition flyers and social media.
